Lemon Pepper Oven Fried Chicken Fingers and a Giveaway!

November is here!  You know what that means?

Thanksgiving? Election Day??  Cookie Monster’s Birthday???  No, no, and no!

Well, actually, yes, yes, and yes…. But there’s something even better!  Something you’ve been waiting for your whole life!… or at least since October 22

It’s Reader Appreciation Month on Food for Thought!  Brace yourself for a month full of giveaways, FFT’s first ever guest post, and magic!

That’s right… magic.  Something truly impossible.  Something you never even imagined in your wildest dreams: something easy, healthy, crispy, flavorful and delicious… all in one recipe!

What is this magical recipe, you ask?? Oven Fried Chicken Fingers!

Ingredients

1 1/4 lb chicken breast tenders
1/4 cup all-purpose flour
1 egg
1 tablespoon water
1.5 cups Progresso® Lemon Pepper panko crispy bread crumbs

I received the Lemon Pepper Panko Crumbs in a prize pack provided by General Mills and MyBlogSpark, along with an autographed copy of chef Chiarello’s new cookbook: Michael Chiarello’s Bottega. The lemon pepper gives the chicken such a flavorful kick that I would definitely recommend it, but you can cerytainly use any flavor panko bread crumbs.  Try these chicken fingers with the Italian flavor panko crumbs, or use the plain panko crumbs and add your own seasonings for a twist!

Directions

1. Heat oven to 425°F. Line baking sheet with foil; spray with cooking spray.

2. In shallow dish, place flour. Coat chicken with flour. In another shallow dish, mix egg and water.

Dip chicken in egg mixture. Pour panko breadcrumbs into another shallow bowl. Dip chicken in bread crumb mixture. Place on baking sheet.

3. Bake 15 to 20 minutes, turning once, until chicken is no longer pink and coating is golden brown.

This recipe, based on this one from Michael Chiarello and Progresso,  is so quick and easy, and results in super moist tenders with the perfect crispy coating!

I’ve certainly made my share of oven “fried” chicken fingers, but I’ve never been able to replicate the crunchy coating that really makes them taste fried.  These panko crumbs are the key!  Since they are already crunchy on their own, they don’t turn to mush when baked.

    This post was so timely since I just started my healthy eating journey this month. Naturally when you say lemon pepper, fish comes to mind. But I thought some JoJo potatoes (that’s what Northwesterner’s call battered potato wedges)would be sublime with the lemon pepper crust. Too bad rural Montanians don’t get grocery goods like that….in other words, hope I win cause I’d be the only person in town to have lemon pepper panko bread crumbs by Progresso.

    What a wonderful recipe! My husband and I like chicken fingers, but we are terrified of deep frying. This would be a great recipe to try. I would love to use those breadcrumbs on this chicken…but also on tilapia. I can imagine a delicious fish sandwich!
