Chocolate Chip Cookies

This weekend we celebrated my stepdad’s birthday (Happy Birthday Pete!).  You know what that means… another excuse to make something deliciously fattening to try a piece of and pawn off on to gift to someone else! 0:)

So last week I called Pete and asked him: what’s your favorite cookie of all time?  And of all the cookies in the world, you know what he chose? Chocolate chip.

I thought, really? Chocolate chip? How boring.  Any ten year old kid with a bag of Nestle chocolate chips can make a decent chocolate chip cookie.  But then I decided not just to make a “decent” cookie.  I would go beyond the recipe on the back of the Nestle bag, and make an AMAZING cookie!

Two Easy Veggie Sides

Some nights when I get home from work, I’m tired.  And hungry.  And cranky.  And lazy.  So I want something for dinner that’s quick.  And tasty.  And healthy.  And doesn’t take much effort.  Or time.  Or too many crazy ingredients. That’s not too much to ask, right?

Well, last night was one of those nights. I didn’t want dinner to be a big production.  So, in the time that I could have had a pizza delivered, I made some easy vegetable side dishes with ingredients that I already had on hand.  Those, paired with some pre-marinated turkey kebobs, left me with a dinner that was easy, healthy, and perfectly satisfying.

This baked sweet potato chip recipe is based on a sweet potato french fry recipe.  It has the same delicious flavor, but takes half the time to cook, since the potato is sliced so thinly.

Apple Streusel Bars

What’s more American than apple pie? Nothing, that’s what.  So naturally, when I learned about All Through the Year Cheer’s Fourth of July contest, I just knew I would bake an apple pie.  I mean, come on, the all-American dessert on America’s birthday… how perfect is that?!

But when I got over my initial “it’s perfect, I’m perfect, yay me!” moment, I realized that nobody wants to eat hot apple pie outside on a 90° day in July.  Ick.  So I did some research, and found the perfect compromise.  (No, no, this time it really is perfect…  trust me.)

Just imagine that an apple crumb pie and a batch of brownies had babies.   You would get these Apple Streusel Bars: apple pie goodness in a tote-able bar form.

Garlic, White Bean, Spinach, and Tomato Sauté

Today’s recipe is so easy, versatile and delicious that you’d be crazy not to try it!  I was first introduced to this topping at my friend Jenna’s apartment, where she served this Garlic, White Bean, Spinach, and Tomato Sauté on top of toasted garlic crostini as an appetizer.  It was so delicious that I emailed her for the recipe the next day.  When I received her instructions, I was happily surprised to see that it was SO easy and quick to make.

Big Apple BBQ Block Party

This weekend in NYC was the annual Big Apple BBQ Block Party.  Jake and I had gone once before, but  we missed it last time.  Jake was determined to make it there again this year.  Basically, it is a weekend-long charity event that takes place in Madison Square Park, and famous “pitmasters” (aka barbecue chefs) are flown in from all over the country to make their signature dishes and raise money for the park.  Throughout the day there are musical acts, seminars, and pitmaster meet-and-greets.  And, of course, there is food… ribs, pulled pork sandwiches, sausages, and brisket galore!

Oatmeal Chocolate Chip Cookies

Yesterday was Jake’s birthday (happy birthday babe!), so I decided to make him a batch of cookies that I knew he would love.  I did a quick search for Oatmeal Chocolate Chip Cookie recipes, and settled on one listed on Rachel Ray’s website.  The process is pretty straightforward, and I already had most of the ingredients on hand.

Turkey Meatballs in Garlic Sauce

When deciding on last night’s dinner, a recipe for turkey meatballs in garlic sauce from allrecipes.com caught my attention.  I’m always a fan of recipes that use ground turkey in place of beef.  The recipe seemed easy and very healthy, and the comments from other readers were all really positive.  The only change that I made was doubling the amount of sauce, so that we had extra to cover our pasta and dip our veggies.
